it soaks any flavor you throw at it, so you can make tabouleh, you can make it witn cinnamon and chocolate, you can make it with paprika, infuse it with vanilla beans, *top it with pesto*, etc., plus various textural variations.
just beware of the gut-destroying saponins that coat the grains (seeds really). not only do they test bitter, they also wear off your intestinal lining (plants don't bite or run so they rely on chemical warfare to avoid extinction). so wash & rewash.
