That's too difficult to say, becasue there's a group of serious contenders. My three personal favourites are Fats Waller, Horace Silver and Thelonius Monk. But one has to consider Miles Davis, Coltran, Morton and some others.

What is your favourite style of jazz music? Maybe you like all jazz music with a passion, and simply can't decide, or do you just not like jazz music at all?
