veggie recipes, yum yum

can anybody suggest some quick, easy and cheap vegetarian that don't require a spice rack to make. i've been looking online and all, i'm more asking for personal favorites. i'm getting sick of stir fried veggies and rice...

girlgun 08.24.2009 06:31 PM

i make mean enchiladas?

carton of sliced mushrooms, one onion, one red bell pepper, 2 cans of black beans rinsed and drained, can of chili peppers... saute until everything is soft... wrap all enchilada like in tortillas with some monterrey jack and then cover with enchilada sauce and add more cheese to top. bake for about 30-45. you can cover if you want, but i like the cheese to be brown on top so i don't cover them.

veggie chili? i make that often too.

there you managed to mention girlgun and vaginal hypertrophy in the same post.

you're in the doghouse tonite. oh yeah.

!@#$%! 08.24.2009 07:34 PM

anyway if CHEESE qualifies as veggie then lemme post a few things:

1) grilled cheese: put butter on frying pan. add a slice of bread, a thick slice of cheese, another bread on top. grill at medium-low, covered.

2) cheese omelette: whip up 3 eggs, drop into a hot buttered pan, shake shake shake, add cheese, flip, wheeeeeee, it's done. runny is best

3) omelette of any kind: as above, but with things like: mushrooms, spinach+feta, salmon, bell peppers and onions, chicken livers, and (watch tampopo)-- rice! (??). today i made one w/ sardines. i fucking love sardines.

organic eggs work best because they taste fucking awesome. regular industrial eggs taste shitty. if you're concerned about the price, costco will sell you 18 organic eggs for about 5 bucks.

then there's

duck eggs
goose eggs
ostrich eggs
turtle eggs

etc/

!@#$%! 08.24.2009 07:44 PM

anyway i am off to make some steak sandwiches. oh yeah.

good nights.

With the exception of fish, I haven't eaten meat since I was 10. I just never liked the taste of it. The thought of eating it, yet alone cooking it, makes me terribly nauseous.

Satan 08.24.2009 07:54 PM

that's funny cuz the thought of eating fish makes me nauseous....

It seems to make most people nauseous.

I try to avoid fish, but inevitably get sucked in by crabs (which are fucking AMAZING in baltimore) and, whenever i can afford it, sushi.

girlgun 08.24.2009 08:03 PM

i love my chili and so does my kid. it's super easy.

i use a big can of hot chili beans, 2 cans black beans, 1 can kidney beans, one chopped onion, one chopped red pepper, chili powder, lots of cayenne, garlic salt, a big can of stewed tomatoes and about 3/4 of small can of tomato paste... i just put it in a crock pot and let it cook all day when i'm at work.

top with some cheese and sour cream... mmmm!

girlgun 08.24.2009 08:04 PM

do you want meatless? or stuff with actual vegetables? because i make really good homemade mac and cheese.

demonrail666 08.24.2009 08:15 PM

i make a mean toasted cheese and tomato sandwich.

my fave. seriously.

demonrail666 08.24.2009 08:33 PM

apart from that moment when you bite into the tomato and then spend thirty seconds breathing frantically through your mouth

Conrad 08.24.2009 08:36 PM

You'll need:
- Extra firm tofu
- Panko bread crumbs
- Hot red pepper jelly
- Sesame seed oil

What to do:
- Cut tofu into thin slices
- Marinate slices in red pepper jelly for minimum of 1/2 an hour
- Dip tofu in bread crumbs, make sure that they're totally covered
- Heat oil in frying pan, add breaded tofu, and fry until golden brown and crisp. Then TURN OVER.
- Remove from pan to paper towel to absorb some of the leftover oil, then transfer to serving plate
- Drizzle with more red pepper jelly.

Serve while warm.

i just made an amazing fusion coleslaw. basically red cabbage, white cabbage, green onions, carrots, toasted sesame seed, peanuts, raisins and the sauce being rice vinegar, sesame oil, chile sauce and sugar. mix together and its great. takes about five minutes and its cheap and you will have loads. god for parties which is what we are doing now.

that sounds delish. i want someone to make it for me. i can't stand to fry stuff in my house. the smell stays for days.

Conrad 08.24.2009 08:43 PM

It is good! I need to have it again.

jon boy 08.24.2009 08:44 PM

we are also making soft shell taco's which are a good veggie option.

girlgun 08.24.2009 08:52 PM

i don't think i've seen hot red pepper jelly. i have jalapeno jelly in the fridge though.

Conrad 08.24.2009 08:56 PM

Do you get PC shit in the States? As in Presidents Choice?

girlgun 08.24.2009 08:59 PM

i've never seen it. wonder what kind of "red pepper" it is?

Conrad 08.24.2009 09:26 PM

Awww, must be a Canadian thing.

Chili pepper.

mmmm, yes.

eat fish + stay smart

try making a crab omelette

OR toss some slices of lox--- lox! hmmm...mmm...mmmm!!!!!!!!!!!!!!!!!!!!!

must... get... lox... (for me i mean).

if instead of omelette you make a fritatta (similar, but thicker, like a spanish tortilla) you can put pretty much anything in it. i used to get one where they put sweet potato, peppers, etc, and it was yummy.

by the way another great way to eat eggs is you slow-fry some onions (yellow ones probably for this) until they are well caramelized then you break some eggs on top and lift them while the yolk is still good. yummy.

potato + onion + eggs are a great mix & i believe one of napoleon's favorite dishes

here's a good quick snack: olive sandwich. take a nice crusty bread, insert seedless black olives, and eat. maybe with a bit of mayo, maybe with a "sauce" (sorta) made of thin-cut red onion, chiles, and lime juice. no meat.

another meatless thing: while i recommend caution in the consumption of highly processed soy products, SOYRIZO is yummy-- it's like chorizo but made of tvp and you can use it with anything from eggs to beans to eating right out of the casing.

eh, gotta go make breakfast... more ideas later

non veg cheese has intestines or stomach in it. :p

mmm mmmmm tasty.

Quote:

Natural calf rennet is extracted from the inner mucosa of the fourth stomach chamber (the abomasum) of young calves. These stomachs are a by-product of veal production. If rennet is extracted from older calves (grass-fed or grain-fed) the rennet contains less or no chymosin but a high level of pepsin and can only be used for special types of milk and cheeses. As each ruminant produces a special kind of rennet to digest the milk of its own mother, there are milk-specific rennets available, such as kid goat rennet especially for goat's milk and lamb rennet for sheeps milk. Rennet or digestion enzymes from other animals, like swine-pepsin, are not used in cheese production.

Traditional method
Dried and cleaned stomachs of young calves are sliced into small pieces and then put into saltwater or whey, together with some vinegar or wine to lower the pH of the solution. After some time (overnight or several days), the solution is filtered. The crude rennet that remains in the filtered solution can then be used to coagulate milk. About 1 gram of this solution can normally coagulate 2000 to 4000 grams of milk.

Modern method
Deep-frozen stomachs are milled and put into an enzyme-extracting solution. The crude rennet extract is then activated by adding acid; the enzymes in the stomach are produced in an inactive preform and are activated by the stomach acid. After neutralization of the acid, the rennet extract is filtered in several stages and concentrated until reaching the required potency: about 1:15000 (1 kg of rennet would have the ability to coagulate 15000 litres of milk).

most of my veg cooking has spices and herbs in it, so Im not sure I can help you. Are you allergic to spices and herbs or? Even if you are dead poor, basic ones are very cheap. Depending on where you live there are often several growing around near you too.. if yr stealthly with scissors.

phoenix 08.26.2009 04:16 AM

spinach rice is super easy...

2 cloves of garlic, a quarter spanish onion chopped.. lightly fry off in a pot with some olive oil.. add long grain rice, swirl around, then enough vege stock to cook it through. stir every so often until cooked. At the last minute stir in some chopped frozen spinach and some parmesan(veg friendly if it suits ya). easy.

Asparagus chopped up into thirds, fry with olive oil, a splash of balsamic and soy, and some seseme seeds. Until it is JUST cooked and bright green.

notyourfiend 08.26.2009 06:25 AM

Thank you!

pbradley 08.26.2009 06:33 AM

I had an excellent vegetable alfredo pasta for last dinner.

notyourfiend 08.26.2009 06:40 AM

^ I've been making lists of ALL the recipes given to me so that I can try them out throughout the new months.

I would share my own, but I'm truly an awful chef. And everything that I eat apparently has garlic undertones?
