veggie recipes, yum yum
can anybody suggest some quick, easy and cheap vegetarian that don't require a spice rack to make. i've been looking online and all, i'm more asking for personal favorites. i'm getting sick of stir fried veggies and rice...

i make mean enchiladas?
carton of sliced mushrooms, one onion, one red bell pepper, 2 cans of black beans rinsed and drained, can of chili peppers... saute until everything is soft... wrap all enchilada like in tortillas with some monterrey jack and then cover with enchilada sauce and add more cheese to top. bake for about 30-45. you can cover if you want, but i like the cheese to be brown on top so i don't cover them. veggie chili? i make that often too. |

anyway if CHEESE qualifies as veggie then lemme post a few things:
1) grilled cheese: put butter on frying pan. add a slice of bread, a thick slice of cheese, another bread on top. grill at medium-low, covered. 2) cheese omelette: whip up 3 eggs, drop into a hot buttered pan, shake shake shake, add cheese, flip, wheeeeeee, it's done. runny is best 3) omelette of any kind: as above, but with things like: mushrooms, spinach+feta, salmon, bell peppers and onions, chicken livers, and (watch tampopo)-- rice! (??). today i made one w/ sardines. i fucking love sardines. organic eggs work best because they taste fucking awesome. regular industrial eggs taste shitty. if you're concerned about the price, costco will sell you 18 organic eggs for about 5 bucks. then there's duck eggs goose eggs ostrich eggs turtle eggs etc/ |
anyway i am off to make some steak sandwiches. oh yeah.

i love my chili and so does my kid. it's super easy.
i use a big can of hot chili beans, 2 cans black beans, 1 can kidney beans, one chopped onion, one chopped red pepper, chili powder, lots of cayenne, garlic salt, a big can of stewed tomatoes and about 3/4 of small can of tomato paste... i just put it in a crock pot and let it cook all day when i'm at work. top with some cheese and sour cream... mmmm! |
do you want meatless? or stuff with actual vegetables? because i make really good homemade mac and cheese.

![]() You'll need: - Extra firm tofu - Panko bread crumbs - Hot red pepper jelly - Sesame seed oil What to do: - Cut tofu into thin slices - Marinate slices in red pepper jelly for minimum of 1/2 an hour - Dip tofu in bread crumbs, make sure that they're totally covered - Heat oil in frying pan, add breaded tofu, and fry until golden brown and crisp. Then TURN OVER. - Remove from pan to paper towel to absorb some of the leftover oil, then transfer to serving plate - Drizzle with more red pepper jelly. Serve while warm. |

(for me i mean). if instead of omelette you make a fritatta (similar, but thicker, like a spanish tortilla) you can put pretty much anything in it. i used to get one where they put sweet potato, peppers, etc, and it was yummy. by the way another great way to eat eggs is you slow-fry some onions (yellow ones probably for this) until they are well caramelized then you break some eggs on top and lift them while the yolk is still good. yummy. potato + onion + eggs are a great mix & i believe one of napoleon's favorite dishes here's a good quick snack: olive sandwich. take a nice crusty bread, insert seedless black olives, and eat. maybe with a bit of mayo, maybe with a "sauce" (sorta) made of thin-cut red onion, chiles, and lime juice. no meat. another meatless thing: while i recommend caution in the consumption of highly processed soy products, SOYRIZO is yummy-- it's like chorizo but made of tvp and you can use it with anything from eggs to beans to eating right out of the casing. eh, gotta go make breakfast... more ideas later |

most of my veg cooking has spices and herbs in it, so Im not sure I can help you. Are you allergic to spices and herbs or? Even if you are dead poor, basic ones are very cheap. Depending on where you live there are often several growing around near you too.. if yr stealthly with scissors.

spinach rice is super easy...
2 cloves of garlic, a quarter spanish onion chopped.. lightly fry off in a pot with some olive oil.. add long grain rice, swirl around, then enough vege stock to cook it through. stir every so often until cooked. At the last minute stir in some chopped frozen spinach and some parmesan(veg friendly if it suits ya). easy. Asparagus chopped up into thirds, fry with olive oil, a splash of balsamic and soy, and some seseme seeds. Until it is JUST cooked and bright green. |
