It's really wide, especially nowadays. As atsonicpark said, I guess once you've listened to quite a few dubstep albums you know what is and what is not dubstep - same with wonky. Let's say dubstep has usually a heavy focus on bass, halftime 140 BPM rhythms - which usually makes it kind of slow. But it does not necessarily apply: most of the more "mainstream" dubstep trackshave little to no bass, focusing on midrange wobbles, while some more atmospheric dubstep has no halftime rhythms and includes uk garage / 2-step reminiscences (burial for instance). There are also producers that include elements of minimal techno in their work (Sigha, ...), so it makes things even more confusing ahah. But it's worth getting into it, definitely.
And yes, both The Field albums are amazing. Personnally, Yesterday & Today is also my favorite, but the best Field track remains Over The Ice imo.
