that quiche certainly looks amazing - is it difficult to make?

it's easy, one of my quickest recipes!

i use store bought puff pastry, it's good enough since it's a difficult dough to get right...

you need spinach (frozen is fine, it has to be in small pieces anyway), an onion, ricotta and parmesan cheese, salt and pepper to taste, an egg or two

heat the onions in a pan until they are glassy, then add the spinach (to thaw and heat it, or just to cook it if you use the fresh stuff)

while this is going, mix the ricotta cheese with the eggs in a bowl, add salt and pepper and anything you want to add (nutmeg gives a nice touch)

when the spinach is done, snip it in small pieces first (if it's fresh) or just pour it in the cheese mix and stir it in.

add some freshly grated parmesan and whatever you want to toss in there

fill a pie mold with the puff pastry, pour cheese mix in, put in oven, done!
