"farmer's cheese" is just my broad english word for some sort of unripened cheese like queso fresco-- though the definition and actual products vary widely-- could be feta as well

im suspecting that's it because notice how it holds its shape instead of melting even in the parts where it turns gold

1ßß% on the cheese front! i used turkish "hirtenkäse" farmers cheese.
no perchament paper... phyllo dough
no olives, dill,
börek styled "auflauf" the filling were smoked melanzni and red peppers
