Needless to say, I haven't tried any new recipes lately. I have been mainly having microwaved veggies & bread for dinner. Tonight I'm having one of my favorites - California Pie. I'm serving it with a tossed green salad & fresh peaches for dessert.

California Pie

1 (9 inch) unbaked pie crust
5 slices turkey breast
5 slices colby cheese
1 (16 ounce) bag frozen California medley vegetables - today I used a mix of fresh veggies from the farmer's market
5 slices brick cheese
1/3 cup sliced green onion
1/2 cup sliced mushrooms
1 medium zucchini, sliced
1 clove garlic, minced
6 slices fresh tomato
1/2 cup grated cheddar cheese

Preheat oven to 350 degress. Steam & drain frozen veggies. Saute onion, mushroom, zucchini, & garlic until tender. Layer in pie crust in following order: turkey, colby cheese, California medley veggies, brick cheese, sauteed veggies, tomatoes, & grated cheddar cheese. Bake 45 to 50 minutes.

This is also good without the turkey, if you want to use just veggies.
