generally speaking, at chain stores etc there yirgacheffe and sidamo are the same coffee. They are both regional names of places in Ethiopia where good coffee comes from, in fact coffee is indigenous to this Kaffa region of southern ethiopia, but its like saying San Gabriel Valley in the Los Angeles area (ie, Yirgacheffe is a small region of what was previously called the province of Sidamo)
the fluctuation is just the natural affects of differences in individual coffee plants getting blended together in your cup
