They're not necessarily dead animals. People will often take regular stuffed animals/plush toys and 'modify' them. They'll sew pockets into them to mimic bodily cavities and, well, you know.
Fursuits will dress up in animal costumes during, er, copulation. Some like theirs "spooged on," others do not.
Toonophiles will fuck anything that resembles a cartoon (adhering to their own preferences of course). This includes stuffed animals, suited humans, rubber dolls, etc.
