in the morning i made a pretty badass scrambled egg with cherry tomatoes and mushrooms and the rest of the day i only ate trashy snacks cause the day was stressful and i didnt have access to a kitchen....

quick way to cook a slab of ribs on the grill:
1. smother both sides with ranch dressing then wrap them in tin foil and cook both sides 45 mins each. make sure the coals are very hot. 2. then, unwarp tin foil and place them back on the grill with two spatulas to cook for 15 mins on each side. 3. after that, gently pick up slab with two spatulas and place them in a beer cooler shut the lid and let them steam for an hour or a little more. 4. boom!!! you have yrself some motherfucking ribs bitch. i'm doing it now as i type. 5. you won't learn this from this internet. you learned it from me. thank me later. 6. after you gorge on yr ribs, have an apple because it's good for you. and remember to drink fresh water. esp well water. fake bottle water will do too. |

wow this thread got pushed back and i couldn't find it
i don't have this ready to eat yet, but after 2 weeks of hanging (solstice slaughter), i got me 50lbs of mutton! i'm trying to figure out how to cut mutton chops from a side of mutton-- luckily i got the backbone in my side. doesn't look too simple! also trying to figure out the neck, shoulder, leg, shanks, etc. maybe i'll just use the chuang-tzu method and slide the knife wherever there's an opening. for that, i'll need more tea with bourbon. hA! |

so many methods! i've been watching some youtubes. there's a british demo for lamb wholesale cuts that looks useful i need a large saw! next time i'll get the whole animal instead of sharing (weird cuts when sharing) ok, here i go. i think i have enough bourbon in me to get started. nazdarovya! === EDITED TO ADD IMPORTANT WARNING bourbon + butchery = FAIL. also, headphones. see, the idea was "i'm overthinking this, take a shot and let's get at it". then i put on my headphones to power through the thing. that was stupid. i whacked the neck bones with my chinese cleaver (not a meat cleaver) and the edge shattered leaving tiny shards of sharpened steel in the bone. then because of the stupid headphones i didn't hear them the first time and whacked again. more fucking shards (only then i realized the thing broke twice). it was a great fucking knife and i fucked it up. made the best pizza cutter. sadness. took me a while to find the pieces of steel too, too-- imagine eating a tiny sprinkle of razor blades in your stew, and shitting blood for weeks afterwards. the revenge of the mutton! fortunately the shards were embedded in the bone (which i now have to extract). but ayayay. what headaches. i gotta refresh & reapply my mind. that was a fucking dumb decision. good question. many possible answers. and now let me be your cautionary tale. like igby. |

after coming back from my earlier fuckups, i managed to get some nice cuts and i cooked a mutton neck stew all night-- it smells of curry powder & spices and teh meat is super tender. i can't wait to eat it over a bed of hot rice and with a nice IPA on the side.
